Metodo classico 2008 Blanc de Blancs Brut Nature

In the spring following harvest, it undergoes its secondary fermentation in our cellars at a constant 14oC, where it remains for some 150 months. It is then disgorged and receives additional bottle-ageing for about one year. Appearing a rich straw yellow with golden highlights, it develops an abundant, silky mousse and a long-lingering bead of pin-point bubbles. The bouquet, generous and multi-layered, is redolent of vanilla and banana, alongside subtle hints of toasty oak and earthy mushroom. On the palate, it shows full, tangy favours, rich complexity, and a lengthy progression and finish that leaves the mouth dry and clean.

ORIGIN OF THE NAMEThe receding Würm glaciation left enormous amounts of morainic deposits covering our hills. Our Chardonnay vineyard, planted in this type of terrain, faithfully conveys that terroir with its distinctive structure and notes of salinity.  

VINEYARD: The vineyards are planted in mixed limestone-clay soils at a density of about 5,000 vines per hectare and are trained to the Guyot system. The grapes are harvested exclusively by hand in early September.

VINIFICATION: The clusters are de-stemmed and the berries gently pressed. After the must is gravity-settled, part is fermented in new and used oak barrels, part in stainless steel tanks, then the wine matures sur lie. The wine undergoes a secondary fermentation in the bottle and rests over 150 months in the cellar. It is then disgorged without an added dosage and ages a further six months before release.

GLASS AND SERVICE: Serve at 8°C in a generous-sized flute.

FOOD PAIRING AND WHEN TO ENJOY: Ideal with first and second courses of fish, poultry, or veal and delicious with foie gras. It will develop further complexity during the three years after disgorging. If well-stored, it will gain even more richness on nose and palate over the following five years.
